Native Remedies Pot Luck Recipes

This week we had a company pot luck and the food was such a hit that we even got recipe requests from some of our Facebook fans! Below are two recipes for the most popular items. As I get more I will share them as well. Enjoy and let us know how they come out!


Anisha’s Vegetable Patties


Things you’ll need:

1 tablespoon olive oil1 tablespoon cumin seeds1 teaspoon garam masala1/2 tablespoon turmeric,1 tablespoon garlic1 tablespoon ginger paste1-2 red onions chopped6 boiled mashed potatoes1/2 package frozen peas (thawed)1 package puff pastry sheetssalt to taste


Directions: Take a frying pan add some olive oil to that add cumin seeds, turmeric, garlic and ginger paste and green chilli’s (optional) add salt to taste and saute for 2-3 minutes. Add the chopped red onions and saute them till they are golden brown and then add the mashed potatoes seasoned with Garam Masala & Coriander powder, peas and mix everything together.


Preheat the oven at 450 degree. Make sure puff pastry sheets have thawed out for at least 15 minutes prior to baking. Cut the sheets into 4 equal halves. Open the sheet and stuff the vegetable mixture in that and close the sheet from all 4 corners. then put some olive oil on the baking tray and place the patties on the baking tray. Bake them for 30 minutes or until golden brown.


Sheila’s Diri Ak Djon-Djon (black rice with mushrooms)


Things you will need:

2 cups djon-djon mushrooms (or European dried mushrooms)2 tablespoons vegetable or olive oil3 garlic cloves, crushed and minced1 small onion, chopped1 shallot, sliced2 cups long-grain rice, rinsed with cold water2 teaspoons salt4 cloves1 to 2 thyme sprigs


Directions: In small saucepan, soak mushrooms in 4 cups water for 10 minutes. Boil mushrooms on low heat for 10 minutes. Strain the mush rooms, reserving the liquid. Add oil to a cast-iron pot on medium heat. Stir in garlic, onion, and shallot for 2 minutes. Add rice and stir for 3 minutes.?? Add reserved mushroom water, salt, cloves, and tritri. Bring to a boil until water evaporates. Lower heat, stir rice, and place thyme on top of the rice. Cover and cook for 20 minutes. Remove thyme. Stir before serving. P.S. This rice is usually served with Legume or Cabrit.
